Making Cider?

The post below has me thing. What kind of apples make the best tasting cider? Does anyone have a recipe? I know you should use a mix of varieties. I don't like it sweet.
 
I use 1/2 golden delicious and 1/2 jonathan. Keep in mind that I raise my own apples so they're riper than store bought. As far as a recipe, we just grind the apples and press them ( I have a cider grinder/press ) and filter the pressed juice through cheese clothes and then a coffee filter and you have apple cider. Keep refrigerated, it will only keep a short period of time before it starts to turn to vinegar. It can also be froze to use as wanted.
 
Sweetness comes with maturity of your apples. Mine is part Grimes Golden, part Red Delicious, and part MacIntosh. Flavor varies a bit depending on when I pick apples. Doesn't matter, I make applejack out of most of it.
