Pod count is a rough guide. I've seen seed size to be enough of a factor to throw the final measured yield off the estimate by ten bushels or more. 20 to 25 pods usually will mean 40 to 45 bushel or more per acre. A plant that has 30 three seed pods may have a neighbor plant that might have 20 three seed pods and a few two seed pods. 30 or more is generally impressive.
 
Here is a link to the way I do it. You basically are counting plants and pods in a given distance. Then you average the number of beans in the pods. You then estimate the seed size to figure the seeds per lbs.

It sounds hard but it actually does not take too long and is pretty close if you are honest with your averages and seed size.
