More canning Green beans

Well I have 7 qts. in the pressure cooker right now and will have a few more after this batch gets done. Then later this afternoon I will be doing some bread and butter pickles
 
Rich - do you still use the old green canning jars?

Pjh those look great, I love yellow and green beans! You can send 3 jars my way! Lol I dident get enought to can or freez yet, been picking them and eating them with diners.
 
Yeah Jay - they're good. My wife fixed a big pot of fresh green beans, new potatoes, a whole onion, and a big chunk of ham, all cooked in an old cast iron dutch oven. She used chicken broth for the liquid. We've been eating on it for several days now. Seems like the more you re-heat it, the better it tastes.
 
I use any I can find at yard sales etc. Did 7 qt or green bean then 6 pints of beans. Then after I got those done I did 1 qt and 6 pints of bread and butter pickles and then 6 pints of dill. Would have been 7 pints of dill but had one jar break as it was in the hot water bath
 
The one I did today was a store packet mix so I cheated on it. I will look and see what recipes I have for them. Send me an e-mail and I'll scan them and send them to you
 
We have canned 47 quarts of beans and are now officially done. Tomatoes start up soon, and applesauce after that. No pickles, maybe someday we'll learn the skills.

What skills it is all doing as the book says to do but then I do collect cook books. I guess as some say I am an amateur chief
 
Just from memory, try this. 1 cup vinegar, 1 cup sugar, 1 teas salt. Bring to a boil for a minute or 2 then let it cool. Fill a qt. jar with pickles and sliced onions. Add a half teas. of celery seed, and a teas of mustard seed. Pour the liquid in & refridgerate for a few days. You can also water bath can them for long time storage.
