The two outside concrete slabs are where the mules and one milk cow would enter the barn.

Looks to me that the horse collars are hanging upside down, or bottom side up, from the way they would be on the horse. Hanging the way they are shown saves buckling the strap for storage.

Yep, that's exactly what I meant by hung up right. I've harnessed and unharnessed more than my share of horses when I was young, and you're right about not having to buckle the strap.

I usually mention that to restaurant managers when I see them hung small end up, but mostly just get a blank stare.
