I suggest: Find another non-profit in the area that would let you do it under their name.
Such as: A PTA or other school support group or a neighborhood association, or a Lions Club, or a church, or a political club.
Approach them, tell them what you'd like to do. Maybe say you'll recruit all the volunteers needed.
So they don't have to do too much work.
Ask if you can run the money thru their legal non-profit. You would give them the money and the non-profit would then buy the equipment (or whatever your plan is) This is a ordinary request, sometimes called "A project of..." Ask them if you can use their insurance, (if you think that's needed)
This is a much better plan than setting up your own non-profit for a one-time event.
