Canned Venison

Just got done canning my second batch of venison. Have to do it in quarts now with 3 kids that love the stuff. One of our favorite meals with gravy and noodles. Hope to get another deer during rifle season to can some more and make deer sticks. What do you all do with your deer meat? Looking for ideas.
 
We do "dump stew." Canned venison chunks, and canned veggies as available. Potatoes, corn, peas, carrots, green beans. DUMP them in a crock pot and cook overnight. Excellent for deer camp, or any other time. Salt, pepper, other spices to your taste.

I usually try to put up as much as I can to save freezer space. Stew and chili 100+ pints ea (single servings for a quick meal). Anywhere from 30 to 50 ea of the others for fix'n meals. About the only thing we can more of is tomatoes. If you count sauces and stuff.
 
My Sister and Hubby canned many deer, just flat out delicious.

I'll give her a shout ot find out their way of getting food stored, juicy and tender.

I love canned venison. I like it over just ramen noodles with no seasoning. I'm in college and home canned venison and ramen is plenty haha. We make hamburg, can deer meat, deer sticks, sausage, tons of jerky, and steaks. We get about 3 or 4 deer a year and we process it all ourselves. I love the stuff. I am in Ohio right now trying to get a nice buck. Glad to see others can it.
 
I agree with your idea of canned meat. I can chicken, beef, pork and turkey. There's nothing better, in my opinion. It's easy to can, easy to prepare and delicious to eat. Over rice, noodles or potatoes, a quick and easy meal. Anyone out there who hasn't tried canning meat is missing out. If you need instruction on how to do it, just go to YouTube and there are lots of videos about how to can meat. If you get a deer or elk, can some. If you find beef, pork, chicken or turkey on sale, can it. It keeps for years. You will be happy you canned meat once you try it.

I butchered one of my beef cows a few months back. Steaks and roasts were not that great. Canned them and voila, delicious!
 
We grind venison with 75/25 ground beef and bacon for hamburgers. We also marinade the back straps, wrap in bacon and grill. Beyond that we mostly make jerky and summer sausage.
 
I bought a pressure canner this summer with an eye toward canning venison this fall. Now, it looks like I'll be working on the opener.

My wife cans a lot of it. My daughter, 21, thinks it's beef--we fibbed to her years ago. We serve it over noodles. I like the back straps and cut some roasts/steaks and grind some burger. Saw six this morning but not close enough. Hunting with a .357 Max in a 10" Contender with a 2-1/2 Redfield scope. Season just opened so I have lots of time.

Well first i have to SEE the deer to get one and if this year is not better them last there will be no deer meat . Ours get cut and frozen like our beef and pork. Then done on the grill. Now for the past week every night between 9:30 and 12:30 there are three doe that come to eat in the neighbour's yard not 40 feet from my window. BUT I CAN NOT SHOOT IN TOWN. probably be the only three i see again this year. Other then the ones laying along side the road going out to the farm. Sofar three nice bucks have been taken by cars and trucks. All three were the ones we have seen on the trail cam. Even Wiley E Coyote's luck ran out this year as he got mashed by a car or truck. For four years i have seen him-her while deer hunting and shot AT him -her four times and missed by a whisker , now i don't even have it to shoot at.
 
I have the last package of steak cut up and simmering in water with beef base flavoring , a paste affair, on the stove right now. It will become venison barley vegetable soup. When the venison is 2/3 done add carrots, celery, green beans, and barley. Season with parsley, bay leaf pepper, basil.
One quart for me and one each for the two neighbors.
