What would happen if I removed the entire governor assembly from my Farmall H?

You wouldn't like it, and I wouldn't recommend it. Earlier this summer, the governor quit working on my H with the same effect, and there was no way you could control engine rpm with the throttle, even driving with no load. You either lugged the engine and killed it or way over revved it.

I lucked out and bought a serviceable used governor on ebay for $25. After installing it, I realized the original governor hadn't been working right for a long time. The properly functioning governor made a whole different tractor out of it.

Well the governor only helps control the speed of the tractor and protects it from over reeving. So I guess if you want a hot rod that will blow up at about 2500 rpms then remove it and tell us how it works out. Also with out the governor every little change in load you will have to adjust the throttle.

You could connect the throttle to a gas pedal like on a car.

Why are you thinking this?

I am in the process of restoring a 1942 Farmall H, and I was just thinking, since I am will not be using this as a farm tractor, and just a parade tractor, does the governor provide a real benefit. I really do not know what I am talking about, for this is my first rodeo on a restoration.
