Good Food For Road Trips

In trying to avoid too much fast food when hauling stuff around, I bring some snacks and things in a cooler on my trip. Sitting in a truck seat for hours at a time does not motivate an active digestive tract if you know what I mean. What are some good eatins to bring on the road that don't inspire too much digestinal upheaval?
 

I bring cold cut or meat salad sandwiches, grapes, small peeled carrots. It was big national news last week that nuts are very good for you.
 
Have you ever thought of getting one of the coolers that plug into cig.lighter power out let. We had several drivers that carried them and liked them. Said they could carry food and it would keep through the day.
 
Grapes , bananas , peanuts , and smoked salmon! All finger food so you don't have to stop to eat. All good for ya and the stomach.
 
Well as for me i had peperoni sliced thin , swiss cheese trisect Doritos snickers ham and hard salami buns German style mustard chips and PEPSI had to have lots of Pepsi . and i had a fridge in the sleeper Oh yea mini donuts and them small fruit pies . I was good to go . When your under and oversized load you have to lay down as many miles a day as you can from sun rise to sun set .
 
Only trouble with those coolers is they cool a certain amount below ambient. If it's 90 in the truck you're probably only going to see 50 in the cooler. I always had to have sleeper AC running to keep cool air to the outer element, late spring through mid-fall, and in Florida.
 
Momma makes homemade bread with egg, bacon, and cheese rolled up. Eat cold or warm, on the go or stopped. Always run out too soon.
 
The drivers that carried them said they put several freezer cold packs in them and help hold them long in summer.I have put a thermometer on floor of tractor and have gotten readings of a 109 degrees in summer.
