Fruit cake story

Growing up in town we had a lady neighbor who was not
the brightest. Just neighbors but mom did consider her
a friend and was kind to her. On many occasions she
would come over to see what mom was cooking for supper
then she would go home and cook nearly the same thing.
Mom usually cooked a real fruitcake at Christmas which
called for candied fruits, raisins and pecans, spices
in addition to butter in the batter. Getting the recipe
from mom one day she went home to bake the cake. Next
day she came over to ask mom if her cake was spicy hot.
Mom said no and they started to review how she made the
cake; fruit, yes; raisins, yes; pecans,yes; spices,
yes; butter, no, she had no butter so she used the
drippings from the sausage she had cooked for
breakfast. My Mom retold that to us in private nearly
every Christmas and five years after moms passing I
recall that story with a smile.
 
Growing up, my dad owned a service station/garage.

He had lots of loyal customers, one lady gave him fruitcake just about every year for Christmas.

Apparently these fruitcakes had been regifted several times, or she didn't know how to make them, they were rock hard, inedible!

My dad brought one back to the shop, asked if I wanted it as a joke.

"Sure, just leave on the bench, I'll see it I can cut it with the grinder!"

Earlier that winter there had been a rather large rat seen around the shop. He seemed rather fearless, would let you get quite close before running away. We named him Rocket because of his speed. I had even baited him out with leftover lunch. He would walk out, stand there and eat it, go back behind the bench.

I got the idea to break off a piece of the fruitcake for him. He came out, couldn't eat it, so he took it away for later.

That was the last time we ever saw Rocket. Maybe he thought we were trying to poison him, maybe we did!
 
My wife makes a real good fruitcake using her grandma's recipe from way back. Last weekend she bakes 40 of the loaf size fruit cakes and some pound cakes to give for Christmas. They all go pretty quick and people start asking for them a month or 2 before Christmas. Real moist and not dry like a Claxton fruit cake.
 
We still use moms recipe, called a white fruitcake although it turns out traditional fruit cake color when baked. Great fruitcake from a recipe of unknown origin from some 50 plus years ago. Will be making ours on Friday.
