several burners on my kitchen stove with standard type burner elements get too hot. they become red regardless of the setting of the dial. What should I look for to repair this stove? Thanks in advance for any and all answers.

Means the control knob rheostat is bad and either need to be replaced or get a new stove.

on most older range tops you have what are called infinity controls. We have tons of them at work. There are two basic types one is black, lite duty, and the white ones are heavier duty. They also come in a boat load of voltages. 120, 208, 220, 240. If you replace them try to match your voltage or go one higher. Also the newer burner rings 1970 and up are only two connection. the old three connection and the control for it are way gone. I loaded the photos so you at least have an idea. We rebuilt a lot of equipment at work so let me know if you have questions. If the connectors on your controls or heat rings go bad you CANNOT use regular stakeons. The must be high temp stainless crimps. You need to buy them from an appliance parts place and they are like $1.50 each!

Typically, the surface unit switches run $50 to $90 each, so if you have "several" bad it's not economically viable to repair the range, a sign of the times.

2X on the high heat crimp-on connectors. We used to service commercial dishwashing machines, and we were constantly replacing the plain connectors on heat contactors.
