Lot of things it could be, but one possibility is a leather knife. Were there any other leather tools (punches, rivets sets, etc.) with it?

It's a fleshing knife used to remove fat off of an animals hide.

I would beg to differ. My wife builds a bunch of chaps, chinks, horse tack and other leather products, and that is called a head knife in the leather working world. You use it in a rocking motion to cut heavy harness leather and such. She has 4 or 5 of them, in various sizes. Her favorite is one that a friend of mine made for her shortly before he passed.
