Hello,

Two eggs, bacon, sausages, potatoes. Espresso Coffee, orange juice, mixed fruits.
All is good!

Wife is in Hawaii with her ill brother, so I'm alone until she comes back.

Had toast and some left-over pork stew for breakfast. Just had a can of chili for lunch; such is the life of a guy who can heat but can't cook.

I'll have to ask my BIL. I/m pretty sure of the process, but he has written it down last time we did it. Will let you know after next Tuesday. He has two in the fridge cooling off, we will process them for the freezer next Tuesday,

Actually we have a meat cutter in the family. But after so many cutting sessions we got it down pretty good. Even the meat cutter is impressed!

I like to cook, and I think I do a pretty fair job of it, but my wife refuses to eat anything I cook. Even if I buy groceries and buy something in a different brand from what she's used to, she won't eat it. The only exception is steaks, burgers, or brats that I grill.

In 49 years, I've never figured out what her hang-up is. Her father was the ultimate picky eater and I guess a lot rubbed off onto her. I love to experiment and try different things, and all she wants is the same old stuff all the time.
 
This was made by a local butcher. The fellow has a pretty good recipe, but this year he seemed to have a bit more mace in the recipe than I really care for. If we are lucky enough to get another deer, I'll just have him grind it and make my own sausage. Have the knowledge to butcher our own, but don't really have a decent faucility to do it in right now. Hope to remedy that within the next few years.

We electrified a hand meat grinder years ago.
I think the ratio is 12 t0 1 with a 1725 R.P.M. motor. Beats doing it by hand. May be I'll take a picture of the thing Tuesday,
