Who makes a real good knife sharpener.

First pick for SHARP blades is the knife and tool sharpener by darex. Makes them extremely sharp really fast. Slight hassle to change belts but worth it.

Second would be to use a diamond sharpening stone. They are really nice to use stay flat and never dish out like natural stones do.

You can use sandpaper and a plate of glass too if are looking for cheap.
 
You need a set of stones, either natural or man made. Start with about 600 grit going to 2000 grit.
 
It depends on what and how you want to sharpen. Have you ever noticed that new knives have a sharp secondary bevel instead of a long taper? If you want to maintain this taper, crotch sticks work ok. When I buy a new knife, the first thing I do is sharpen on a coarse stone until I get rid of the bevel. Then I work my way down with finer Arkansas stones until I achieve the edge I want. Ellis
 
Only thing I use is a wet stone. When done with a knife I can shave the hair off my arm and have done so many times. I also keep my hatchets and axes pretty much the same way. Had a couple people about fall over when I grabbed my axe and cut a deer hide better then the knife he was using
 
I agree on the lansky knife sharpener they do work well.I also ran across an old water wheel knife sharpener that has the stone in a water bath to keep things cool and flush away the shavings from the blade that works good on the realy beat up knives

I assure you a 10 year old using a Lansky can get an edge equal to anyone's freehand. That is true until the edge go's to the strop which is only nessary for straight razors and surgical insturments anyway. Lansky offers 3 edge angle options which I believe should all be used on a stockman knife. You should carry one of the little crossed ceramic rods for dressing the edge between going back to the stones. If anyone knows how to use a knife a butcher does. They use a steel or rod several times a day instead of expecting a knife to stay sharp for a week between stoneings.
 
I recently found a knife sharpener made by the company that made drill doctor bit sharpener. It is called work sharp, costs about 75-85 bucks. I considered myself to be able to sharpen knives to a good edge using a stone but this is really a wonderful tool. Bought several for gifts recently. Search for worksharp and they have video to watch. I often looks at new things as gimmicks to separate one from his money, but, I really like it and highly recommend the product
