I have a 101 jr that I am going to get a Parade paint job ( it was
purchased new by my grandpa and currently owned by my 80 year
old dad - pulling out all the stops!) I am going to have the tins
done profesioanlly. At some point I will have th cast frame and
motor. How do I get it smooth ? trying to do a little sweat equity
for the proffesional painter. I looking for that off the chain glass
look.

Most people just clean off the old paint and rust and paint it. Making cast look smooth makes it look artificial and is more work than it's worth.
 
I agree 100% and will add that the contrast between the glossy tin and rough cast is what makes the job. You will either have 200 hrs in grinding/sanding or you will use hi-build surfacers to build smooth in which case durability will suffer as too much film build decreases durability. Leave the cast rough, it'll look a lot better.
