The manifold gasket from the Felpro kit has one side metal and one side fiber. Which side goes to the head? It's not marked.

Think about it. Which surface is more likely to be perfecly flat - the head or the manifold? That side should get the metal as the other side will have some ability to take up any imperfections in the surface.

Thanks, I was thinking the hotter surface should get the metal, meaning manifold.

Your argument does not hold water. The metal touching the exhaust manifold will be the same temperature as the gasket metal interface with the rest of the gasket. The gasket is heat resisting material anyway? That metallic side is not going to thermally insulate anything to any degree whatsoever. Compliant side to wherever compliance might be needed, every time.
