Replacing manifold gaskets

I need to replace the exhaust manifold gaskets on an 1850 diesel but am concerned that the 3/8 stud bolts may twist off. Is there a right way to remove the nuts without fear of this happening? Should I heat them with a small torch first? Thanks for any replys.
 
I use a sharp chisel to help split open the nuts slightly, usually don't need to go through the nut. They will open up then and come off with no stud damage. New nuts are not too expensive, and no studs need replaced.
