I've searched high and low and can't find the purpose of the sensor connection just above and to the right of the oil dip stick. Photo attached.

Not the block drain/freeze plug. It's a 3-plug electrical connector.

Could it be an electric temperature gauge sending unit that someone stuck into the block drain hole?

That's not a temp sender it s oil pressure sender I spec it was used just to plug the hole.

The thread in the block is 1/4" National Pipe Thread.
If you want you can replace the non-functional sender/plug you have now with a standard pipe plug or a brass petcock... There's probably some good originals on ebay, or you can get one of a modern design at an auto parts store.
