Thermostat question

Well after reading a number of posts about thermostats I decided to stop procrastinating and put them in 2 of my n's. The first one was mr. Edd a 48 8n, I was alone so I used a block and tackle to lift the hood enough to do the job.when I got the hose off there was one in it, but it was right up against the rad. and I couldn't tell by squeasing the hose. I replaced it with a new one and new hose all good. Now for Grampa Ray the 2n with Wagner loader. I thought I was going to have to remove the loader to do it which is why I put it off so long, but after looking it over there is plenty of room to raise it up enough the same way I did it with Mr. Edd. It went so easy I felt stupid for waiting so long. So much for that part, now the question I tested the thermostat I took out of Mr.Edd on the stove with a thermometer it say's 160deg on it but didn't open untill 190 deg I checked it at 160,170,180 & 190 full open at 190. I used a meat thermo. ( wifes not home) is that accurate enough. After finding and removing it I thought I would use it in Mr. Fixit a 48 8n but now after testing I think maybe I better get a new one. Mr.Edd ran good with it and never seemed hot. I am posting pictures of the hood raised on Grampa Ray and the thermostat in question.
I think I answered my own question, for the price just get a new one.

Not a bad idea new thermo and a new hose. To keep the new thermo from migrating up with a hose clamp on the hose to hold it in place. The new one will be installed flat side pointed to flat head.
