I replaced the pistons (and sleeves/rings) in my 1945 2N. The top of the pistons were slightly domed and touched my cylinder head (not bolted down, no gasket).
I'm concerned I may have removed 'too much' cylinder head material as my max compression is only 40 PSI across all pistons. Root cause may lie elsewhere (and I'm troubleshooting that for now) - just curious if removing too much cylinder head metal might be my problem; your thoughts?

on't make that kind of difference....you have other problems!

Could be valve timing. Check timing mark on crank gear and cam gear.
 
Very comon problem. There is little clearance between the head and piston and machine work was not very precise back in the 40's and 50's. Therefore removing material from the head and/or block on one engine may be ok while the next one may cause interference problems. There are shims available in different thicknesses to compensate for this. The shim must be against the block and sprayed with copper coat. I have used them and don't worry, they do not leak.
