Started my dear 8n the other day white smoke poured out the
exhaust hm! Looked in the radiator and found some oil in the
water. Took the head off and found no obvious blowouts in the
head gasket. Took the head to a machine shop where the man
said the head was warped. Is it possible that the gasket was bad
and I could not see it and can a warped head bleed water into a
cylinder? Also how much can you shave off the head before the
pistons hit the head? Thanks for any advice.

if you do have it shaved.. lay it on the deck sans gasket and plugs.. use a couple studs / bolts as alignment dowels.. roll engine over to see if the head moves. if no.. it's good.

if it does rock a lil.. relieve the places with a die grinder that touch...

Look at the spark plugs you removed. A head gasket leaking into a cylinder will normally be indicated by the plug in the leaking cylinder being steam cleaned. That plug will look a lot cleaner then the others. You can shave only several thousands off a head before the piston will hit the head. The other problem is there is no way to see if the head has been shaved before. That is not as big a deal as it sounds. After the head is shaved set it on the block with no head gasket. Rotate the crank and see if any pistons hit. Grease on top a piston is a good way to determine if it hits. If so you will need to grind out the combustion chamber on the head to get the clearance. PITA but not difficult to do.
