I sourced a new aftermarket knifebar with all new sections riveted on and ready to go...through AGCO. They said "one bolt and the whole knife comes out" but couldnt tell me how.

Anyone do this before, and how does the entire assembly come out without removing guides, ledgers, etc?????

Technically they are correct....in a perfect world ;-) If yours is like an MF 41 mower there is one bolt, 5/8 head, that holds the bar to the arm/counter-balance part of the mower. Back off the bolt a few turns and tap it with a hammer, it should come loose. It comes out from the Left side while standing behind the mower. The mower should be attached, raised up enough to get to the bar, braced to keep from dropping, and the cutter bar in the mow position. I've never been lucky enough to get one out without loosening several guards and wear plates and using a big screwdriver to force it out. Be very careful it's easy to lose a finger!
