I was able to find a good used head for my 1950 B locally. Thanks to those of you that offered parts. I'm going to send this one into the machine shop to have the valves checked. Since I have this out, should I flush the radiator? It seems like I should - and just use water? When putting it back together - I'm guessing that I need a new head gasket, and also the water gasket. Can I get those on the YT site? or where should I look. I appreciate all the help - as I mentioned before, I have not been this far into an engine before. Thank you.
 
you can do whatever but I had great results in lapping in existing seats...using lapping compound and drill. If there is good seating area never had any problems but all this is your dollar...never had much luck with machine shops....

As long as you have it apart you may as well flush the radiator. And yes, use new gaskets.
As far as using water only-if you want to do that at first to check for leaks, no problem there. But don't leave it that way over winter, obviously. When putting anti-freeze in, either use the pre-mixed stuff or pre-mix it yourself before putting it in, since there is no water pump to circulate it.

When I'm flushing radiators I usually fill it with the garden hose, run it for an hour or so, then let it drain overnight. Repeat in the morning. If you're planning on keeping the water in for an extended period make sure you get distilled water! All the extra minerals and junk from the well can create deposits in the cooling system.

Make sure you have antifreeze in the winter, the green stuff at NAPA works good for me

If you are having valves done, have hard seats installed. With today's fuel that should be done. I do it to all mine when getting valves done. Makes two cylinders a LOT easier to start. Also, if new guides are installed have the clearance on the stems on the loose side of spec. I am running into sticking valves as of late. Not sure, but suspect the valve stems are not oiled enough and get hot, and hang up.
 
Valves do not need oil to lubricate them, example would be perfect circle valve seals.

If your are sticking, I would suspect something else.
