Winter Weight Oil

I've been using straight SAE 40 weight oil in my 1010 during the summer to keep oil pressure up when hot. What suggestions do y'all have for winter weight oil, and when should I switch over?

I'm in eastern NC, temps are still in the 70's-80's right now.
 

Also another question while i'm on here for anyone who has a 1010. How does adding shims in the oil pump by the pressure regulating piston adjust pressure, and how many should I have in there? Currently have none.
 
Where you live since you have mild winters I would be running a 20W-50 oil. I live in Missouri and that is what I run in all my engines other then my 1935 JD-B and I run 60W oil in it but it does also smoke a lot
