I need a explanation

Quench is basically the matching flat area design of the piston & head to "squish" into the more open (cupped) area of the combustion chamber during the stroke at TDC. This "turbulence" creates a much more efficient fuel air mixture creating improvements in low end torque and performance using regular pump gas.
 
"NO quench" would mean (at least to me) that the piston doesn't get within probably 0.045" or less of the cylinder head.
