I'm in the process of rebuilding the clutch on my 315 small square baler. How tight do a torque the clutch bolts?

There should be a spec in the op's manual for that. Failing that, or perhaps in spite of that, tighten them until they don't slip relentlessly. Just make sure they're all tightened the same.

I've got a 316, and I believe the book says 100lbs on the end of a 6' bar should be the point it slips. It's important that it slip - it's basically a shock absorber for your drive line. Mine was set up when I bought it, and the drive line would make an awful racket in turns

Drive line noise in turns should not be related to a slip clutch.
