Can you harvest sunflowers (for the seed) with a New Idea picker/sheller?

You could if you didn't want any seeds in the hopper - otherwise, NO!

While theoretically it would look like it would work, I think the head would be destroyed at the snapping rollsand most would end up on the ground as the snapping rolls are very aggressive. But it would hurt to try a short part of a row to to make sure!

The NI Picker Shellers were designed for corn only! No other crop was considered. I cant remember if Popcorn would work! But that's about it.
