If you have facility to soak them to get them clean, you should have no problems. Just use a sheet metal screw to grab the needle valve seat and pull it out of its bore. Be sure you make certain the idle passages are clean. There is usually a tiny hole in the center jet or needle that feeds the idle circuit. If your carbs have adjustable needles, open them 1-1/2 turns to start. If they still surge, they are probably clogged up in the idle port. There is a welch plug over the idle port holes, remove the plug and clean behind it, there are usually 3 sometimes 4 holes bored through to the carburetor throat and also the passage back toward the main needle or jet. if its a fixed jet idle it can also have a jet in the same hole the old adjustable idle needle went into. it usually has a plug over the screw slot.
