I have used my Ford 800 for 30 years and it has run good. Compression tests indicate I should have the heads worked. My question is do I need to have anything done to them because of the unleaded gas now days ? :?
 
Not really, but if it has been 30 years since rework, it probably needs seats and guides anyway.

This old girl has never been reworked so I imagine she is due for more than valves.
 

As for your original question, I'd probably have hardened seats put in the heads to help with unleaded fuels.
The rest would be a matter of what it needed to get a good fresh overhauled engine that will last another thirty years.
 

It would also need new ring grooves for the pistons, (easier to just replace the pistons, LOL) and new sleeves as the ones in it will have a lot of taper.
