I have a ford 4000 su 3 cylinder gas and when I am brush hogging every time the temp gauge gets up to 190 the tractor quits as soon as it cools down some it fires right back up run until it hits 190 again and its stalls out. When I let it cool down it will run for almost an hour if cooler out then when it hits 190 stalls out again. I tried taking the gas cap off to check for plugged vent didn"t help. When it is going everything works fine. Has the factory installed gas line and carb.

Have you checked to see if you've got spark or not? Could be vapor locking or could be a coil or condenser failing

Always, always check your spark first.
When it quits again get out of the seat and Verify that you have a bright bluish white spark that will jump at least 1/4".
Short or yellowish spark will not do.
Requires no tools to pull a plug wire and check.
It sounds to me like you have a connection that's dirty and getting hot and you're losing power to the coil. I would go through the wires/connections from the switch to the coil and clean them.
Checking with a VOM or test light will help you isolate where the problem is.
It is not likely a vapor lock issue with a fuel pump in the system and those 3 cyl Fords have the fuel lines on the cool (intake) side of the engine.

Ditto what UD said.

always rule out electrical first.. then chase fuel.

since this machine uses a fuel pump, vapor lock is at least a possibility, if it is not electrical

If you have a sight glass at the carburetor check to see if it has fuel in it. My fuel pump has 1 screw in it and the screen was plugged with rust, dirt, etc. Carefully clean it out being careful not to tear it. Hope this helps..........Please update as this forum is a learning page for us all...thanks...Ricky
