Thermostat for 3000 Diesel?

As you all have probably figured out, I am fixing this tractor I recently purchased. At any rate, I noticed it never goes above 130 degrees after installing my new gauges.

The thermostat is either failed open or missing. What degree would you all recommend for this unit. I noticed there are several choices. I live in North Texas if it matters.

I run 188's in mine. I wouldn't have less than 180.
Make sure that the cooling system is clean and in good working order...
