how do you set up a three point disc to get an even depth cut between front and rear disc gangs ?

By adjusting the top link length as needed to level the disc front to rear while in use.

i kinda knew that but i was wondering if some have their disc set up to dig more in front or in the back. would there be an advantage to either/or ?

If you want the front to dig deeper and wear the blades faster, shorten the top link. If you want the rear blades to wear faster, lengthen the top link...

i know that. was just wondering if there could a good reason to have one set dig deeper than the other.

No advantage. Set them to run level front to back.
