I'm getting a new serial plate for the Delco Remy starter, would the correct plate be the black (6 volt) for an M?

It has been converted to 12V, but I assume the same 6V starter is used...?

Black is correct, if you can even get the tag anymore. As a six-volt purist, I wonder why you're hung up on the tag color, and not concerned about the rest of the blasphemy. No offense, it might be a clean job, then again I've seen the hood cut to make room for the alternator. And the owner thought it "looked good" because he painted the area where the torch burnt the paint.
 
You can buy replacement tags for starters and generators.
This website may have them, you might check Steiners or
even OEM.
 
6 volt starter is fine. Based on my experience-2 12 volt tractors with 6 volt starters- 12V damaging a 6V starter is baloney. 6V tags are black, 12V red.
