Can someone tell me what the two knobs/valves are on the side of the oil pan?

They are the oil level petcocks. Opening the top one allows topping off the oil level as oil comes out it is full. The lower one is the low oil check. If it is a distillate tractor, the fuel contaminated the oil every day and the level was drained to the lower petcock, then filled to the top one with fresh oil, thus removing a percentage of contaminated oil. They are oil level checks, fill when you cannot drain out of lower one, and stop filling when it runs out of upper.

They also can be used to detect gasoline or distalite in the oil by opening upper and seeing if it is getting more full.
